French cheesemongers often select a different piece depending on when you plan to eat the cheese.

In a French fromagerie, cheese is not chosen only by name or type. The fromager will often ask when you plan to eat it, because the same cheese may be too young today, perfect tonight, or better for the weekend. Telling them the timing helps them choose the right ripeness, texture and strength.
