Sylvain Depuichaffray is a trained chef and self-taught pastry chef whose career included serious kitchens before he built this Marseille address. The point here is not to lecture over a display case. Pick something that looks irresistible. Look at the layers, the glaze, the way fruit or chocolate is handled, and then take it with you.
